These cinnamony winter biscuits are the perfect stocking filler for friends and family. Everybody loves them! You can bake them in big batches and pack them in small cellophane bags, tied up with red ribbons. Or you could get crafty and personalise small cardboard boxes to keep them.
Ingredients
300 g white flour
2 teaspoons baking powder
125 g butter
80 g sugar
1 egg
3 teaspoons ground cinnamon
A vanilla pod or a few drops of natural vanilla essence
Pre-heat the oven at 160ºC.
Mix butter and sugar in a big bowl until they go smooth. Add a beaten egg, mixing thoroughly.
In a different bowl, mix the flour, adding the raising powder, the ground cinnamon and the little ‘seeds’ inside a vanilla pod (or the drops of natural vanilla essence)
Mix the dry and wet ingredients together into a firm dough. Knead on a lightly floured surface. Roll them to approximately 4 mm thick. Now cut into shapes and place these carefully on an oiled oven tray.
Bake for 12 minutes until they’re light gold. Let them cool on a rack until they harden.
